It is definitely approaching winter here.
Today's forecast was wet and dreary.
So... what better way to end such a day than with soup and crusty bread!
Tonight it will be Thai Sweet Potato and Lentil Soup.
I can't believe how easy it is to make!
I made it earlier in the day while Eli was asleep (A massive 2hrs today! Woohoo!) and just heated it up.
I am a bit of a LOT of a carb addict and I can't imagine soup without bread.
I've run out of plain flour and was trying to find a recipe using self raising flour.
After a bit of internet research I decided to try to make Beer Bread!
Here it goes!
Beer Bread
3 cups of self raising flour
3 tablespoons of sugar
1 1/2 cups (375ml) beer
Mix the flour and sugar together in a large bowl
Add the beer and gently fold through till a dough forms.
Form into balls (I made 6 large balls)
Bake for 20 minutes on 200 degrees until golden brown
The smell is divine!
I think it turned out pretty well and I am relieved as my husband's words to me as I removed the last beer (!!!!) from the fridge was "don't waste my last beer!".
I do believe his murmurs of delight prove that the last beer was well used. Hooray!
OTHER OPTIONS:
Pour into a loaf tin/ muffin tray (adjust time for a loaf = approx. 1hr)
The bread is very sweet so adjust the sugar accordingly.
AMMENDMENTS:
Mine came out very light in colour... I think I would brush with butter next time... or even sprinkle with grated cheese and herbs.
